INGREDIENTS for 4 people:
- 3 tomatoes
- 1 red onion (Tropea’s onion would be perfect)
- 2 cucumbers
- 200 g Lombardy Quartirolo cheese
- 50 ml extra virgin olive oil
- 50 g noble dressing
- 50g “taggiasche” olives
- 1 pinch of oregano (not mandatory)
Wash and clean the cucumbers (if you prefer, take away the seams).
Cut the tomatoes in wedges or slices, the cucumber into cubes or rounds. Now cut them into halves twice and put everything in a bowl.
Cut the Lombardy Quartirolo cheese and the olives into cubes, then add them into the bowl
Serve with plenty of extra virgin olive oil, balsamic vinegar (noble dressing), salt and, if you like, a pinch of oregano.
