- 500gr mascarpone
- 4 eggs
- 200gr caster sugar
- half teaspoon of bicarbonate

First, squeeze the juice of the two oranges and add a little water.
Then we start making our mascarpone, break the eggs and divide the yolks from the whites, add a pinch of baking soda to the egg whites and whip them until stiff, then put in the fridge to harden.
We whip the egg yolks with the sugar, then add the mascarpone and mix until a soft cream is obtained.
Incorporate the egg whites into the mascarpone mixture a little at a time, always mixing from bottom to top so as not to disassemble them. Once well incorporated, put everything in the fridge to harden for 10 minutes.
Cut the dove into slices and put it in our container, sprinkle it with the orange juice with the help of a brush, then put the mascarpone on top, and continue like this until the ingredients are finished.
Once finished, leave it in the fridge to rest for at least 30 minutes
