In the hills of Bologna at an altitude of 200 meters near the medieval village of Varignana, the family-run company Be (e) Honey was born, where, day by day, patiently, combining ancient farming knowledge, together with modern techniques, have created what chestnut flour offers to our tables today. A flour still made with traditional and "organic" methods that allows us to savor the authentic taste of hill chestnuts even today.
By selecting the best chestnuts harvested in controlled quality areas, toasted with wood, dried and then being stone ground immediately after the October harvest, the flour chestnuts, a very versatile ingredient, which can be useful for the preparation of recipes both sweet and savory, a perfect combination to make more crumbly and fragrant desserts, with a soft and velvety taste, a little cuddle that warms from the cold winter.
Excellent for making the best castagnaccio, crèpes, pancakes, San Martino bread, gnocchi and tagliatelle, ideal for those suffering from gluten intolerances, is an excellent food rich in carbohydrates and mineral salts, because from a nutritional point of view chestnuts are rich in folic acid, potassium (930mg per 100g), phosphorus, calcium, zinc, iron, Vitamin E and of group B. Chestnuts, compared to the dried fruit to which it belongs, have a low fat content.
