The Riesling of the Oltrepò Pavese "Khione" 2017 by Colle del Bricco is presented in the glass with a beautiful straw yellow color. The nose reveals a wide-ranging olfactory profile, with aromas of cooked apple that combine with notes of chamomile and infusion of medicinal herbs. With an excellent taste-olfactory correspondence, in the mouth it expresses a hinted sapidity and an invigorating and persistent freshness. At the table it proves to be incredibly versatile, in fact it can be combined indiscriminately with dishes based on vegetables, omelettes and fish. We enjoyed it with a very tasty omelette with aromatic herbs.
The vines are conducted entirely with the guyot training system, observing the principles and methods of integrated pest management, to lower yields per hectare and obtain higher quality. The harvest is carried out only manually to ensure greater integrity of the bunches. Only the best grapes and in small quantities are vinified to obtain fine quality wines. Each process is designed to bring out the characteristics of the vines in the best possible way and wisely exploit the qualities of the soils of the different crus on which they are planted, obtaining elegant, natural and extremely high quality wines, in order to bottle the bond with the earth. The company's motto is: "More work in the vineyard ... less in the cellar".
