The Malvasia of cav. Bortolusso still has a procedure according to tradition, in fact the grapes are pressed softly and the must obtained is cooled to facilitate decantation and, after racking, the selected yeasts are inoculated. Fermentation takes place at a controlled temperature between 16-18 ° C, at the end it is straw yellow with greenish reflections, with a dry taste with hints of exotic fruit and spices, it is fresh and lively on the palate. Absolutely to try with the Maranese brodetto, its exaltation in grilled shellfish and risotto.
For several years the Bortolusso farm has begun to give more and more importance and care to its own vineyards, trying to obtain grapes that are always able to express typical but also original final products. The harvest, after appropriate thinning, takes place both manually and mechanically by selecting only the best grapes. Much attention is given to the bottling, which always precedes 30-60 days the placing on the market of the bottles thus obtained. All this with a view to respecting tradition and conviviality, but without neglecting the great evolution of the quality wine market, increasingly globalized and attentive to the leading products of Italian enology and in particular that of Friuli.
